Whisk together the dressing Ingredients
in a large bowl, then set aside.
Bring the quinoa to a boil, then simmer covered for 20 minutes.
In a separate pot, boil the gnocchi for 2 to 3 minutes. Drain the gnocchi using a slotted spoon and add them to the bowl containing the dressing.
In the same water used to boil the gnocchi, cook the green beans for about 5 minutes until they are tender yet crisp. Drain the beans then mix them with the gnocchi and dressing.
Add the cooked quinoa, then top with the dill and green onions and serve.
Quinoa Salad with Black and White Beans
Ingredients for Salad
1/3 cup quinoa
¼ chopped fresh cilantro
1 can black beans, rinsed and drained
1 seeded and minced jalapeno pepper
¼ cup diced red onion
1 can rinsed and drained navy beans
1 cup diced cucumbers

¼ cup vegetable or olive oil
¼ teaspoon pepper
2 tablespoons lime juice
¼ teaspoon salt
1 tablespoon apple cider vinegar
½ teaspoon dried oregano
1 clove garlic, minced
1 teaspoon ground coriander
1 teaspoon chili powder
Directions
Cook the quinoa for about 12 minutes or until tender in boiling salted water. Drain, rinse and set aside.
In a separate large bowl, whisk together the dressing ingredients.
Add the remaining salad Ingredients and the quinoa. Toss and serve.
Quinoa Chili
Ingredients
1 cup corn kernels
1 cup quinoa
Salt and pepper to taste
2 cups vegetable stock
½ teaspoon ground cumin
1 tablespoon olive oil
½ teaspoon dried oregano
1 large onion, diced
1 teaspoon chili powder
2 cloves garlic, minced
2 cans kidney beans (do not drain)
2 stalks diced celery
2 cans diced tomatoes with juices
1 peeled and diced carrot
1 seeded and diced red bell pepper
Optional: tortilla chips, cucumber, vegan sour cream, avocado and cilantro
Directions
In a medium saucepan, boil the vegetable stock. Add the quinoa and simmer for about 15 minutes. Set aside.
Over medium heat in a large saucepan, heat the olive oil. Add the garlic and onions. Sauté for about 3 minutes, (until tender) then add the celery and carrot and continue sautéing for about 3 minutes. Add the salt, pepper, tomatoes, bell pepper, oregano, kidney beans and chili powder. Bring to a boil then simmer for 30 minutes uncovered. Stir occasionally, and then add the corn and quinoa.
Add the optional Ingredients
if desired, then serve warm.

Ingredients
1 tablespoon desiccated coconut
¾ cups water or soy milk
¼ cup fresh pineapple
1/3 cup of quinoa flakes and oatmeal blended together
Directions
Spread the coconut on a baking sheet and bake for 20 minutes at 300 degrees. Stir frequently to ensure the coconut evenly browns. Alternatively, you can brown the coconut on the stove top in a small skillet. Cook over medium heat, stirring often.
While the coconut is browning, cook the quinoa and oatmeal blend with the water or soy milk for 1.5 minutes in the microwave. Top with the toasted coconut and fresh pineapple.

Four large to extra large whole grain tortillas

Step one: The first step is to cook the quinoa. In a pot, add one cup of dry quinoa and two cups of water. If desired, salt the water with ¼ tsp of salt and pepper. Cook until the quinoa is fluffy.
Step two: Gather your tortillas, and heat them for 15 seconds in the microwave. Once the tortillas are warm, not crispy, add the lettuce and tomatoes. Next, add one tablespoon of cilantro for every tortilla. Afterwards, add a few tablespoons of quinoa to the tortilla, but make sure you don’t add too much. After you add the quinoa, add ½ cup chicken in every tortilla. Then, the final step is to add the mayonnaise and fold the tortilla to give it its shape.
